Because they are jealous of the nice weather and good food in Ticino. More seriously, all the languages are included in the game. I bought the German version, inserted the card in my switch and the game started in French... So there you go.
You can change the language setting to English. IT means only that the packaging is in Italian.

If it was sold out, you couldn't put it in the shopping cart anymore ;) And the game won't sell out that quickly. You can still buy Twilight Princess HD for the Wii U today.

When will it stop? It comes when it comes, done. The availability is unknown, what does that mean? That digitec doesn't know when the game will be available again. There's no point in asking either. Wait and see
It's too early to say whether there will be delivery problems xD... If you're in the batch, you'll have the game in your mailbox or be able to pick it up in the shop in time, and even if you do... what's the point of one day more or less, there are worse miseries. The date is set for technical reasons, as unfortunately no official release date for this game has been confirmed yet.
Why do you think this is a question for the community? I would refer such questions to the customer service. They know how many you have in stock.
