Can I use it to charge a Surface Pro 7 via Usb-C? Would I then need a usb A to usb c cable or a usb c to usb c? or does it matter?
I think it will work, but the Surface will not charge quickly. In order to draw enough power from the Aukey, a USB-C to USB-C cable would have to be used. Only this connection supports PD charging up to 60W. A USB-A to USB-C delivers a maximum of 10W at the lower port! But I have to say I'm not so sure the Aukey was a good choice for me anymore. I don't think it will deliver 56W for a long time anymore. I had problems charging my powerbank via USB-C. The Aukey only delivered just under 42W and had great difficulty maintaining power for several hours. It interrupted the charge regularly. If you don't necessarily need a wall charger, I would recommend the Satechi Travel Charger from Digitec, which has sufficient power (75W). But it costs almost twice as much.

I have already charged a Matebook X Pro and a MacBook Pro with it; the power is not quite enough to supply the MacBook under full load, but it is quite sufficient for charging under "normal conditions" or at least to maintain the charge.
Ideally, you should use a USB-C to USB-C cable that comes with a PD3.0/3A port; the USB-A port only provides 2.1A, which is enough to quickly charge a mobile phone, for example.
