Does the adapter also cause a MacBook Pro 16" (Intel CPU) to be able to connect a DisplayPort monitor without the Mac overheating? So far, every adapter/docking station or USB-C to DP cable has caused the system to throttle performance when the external monitor is switched on, as the GPU gets incredibly hot.

Sorry, as I don't have a MacBook, I can't answer the question.
But it must be clear that the USB-C DP function is probably directly linked to the graphics card, so as soon as an external monitor is connected, the graphics card becomes active and works constantly. This is the case with many Windows laptops.
