Hello, I have 2 NAS of 10GB + 2 PC with 10GB card and a modem-router of SALT 10GB, is this switch usable with my equipment and at full speed (8GB)?

You probably mean 10Gb/s (gigabit) and not 10GB/s (gigabyte). This should be possible as long as the hard drives of both NAS and PCs can also read and write 10Gb/s of data (1.25GB/s).

Furthermore, the Salt fibre router must also have corresponding 10GbE ports. The 10Gb/s at Salt and other fibre suppliers are hardly achieved in practice. This is only possible from point-to-point connections, e.g. for a file transfer from your NAS via the switch to the router to another NAS that also sits behind a 10Gb/s fibre connection and is connected to a 10Gb network.

From CDNs there is usually no more than 100Mb/s, e.g. for a software update or download. With 10 simultaneous software updates, the CDNs would deliver 10x 100Mb/s, than 1Gb/s. Do you do large file transfers over the internet with receivers/senders that also have 10Gb connections?

It will work without any problems.
We have a QNAP Nas with HDD and SSD cache, 2 workstations, everything with 10Gbit directly on the switch. Works very well.
Important, use the right cables! We still have the old version of the switch and I have replaced the fan because of the high-frequency sound.
