How does the remote control work? When the +/- button is pressed briefly, is it the volume that changes or does the song change? Or everything via the centre button and +/- is only for the volume?

+/- is only for the volume. Press the centre button 1x for music play / pause, 2x for the next song. To make a call, press 1x Accept call and hang up, press 2sec Reject call.
