I have older cabling in my holiday home. This means that the ubiquity access point does not work (no power). Is this adapter suitable for this?

Not sure if I understand you correctly. In any case, the adapter needs a power connection for the PoE to work.

It depends. With Cat5e cabling, the Gigabit goes through.
And it depends on what the Ubiquiti needs for PoE specs and how much it consumes.
