In our house I have connected all 3 floors with LAN cables. If I now buy one Ubiquiti AP per floor, can I then connect the APs (via LAN) so that a 'large' WLAN is created?

yes that is possible

I also have one AP per floor on the LAN and all 4 together make 1 SSID WLAN NETWORK.

Everything is controlled via the controller, which manages everything online.

Yes, that works very well. You only have to connect one to the network. You can connect the others to a so-called mesh (over the air). All of them can be connected to a WLAN. All AccessPoints that are not directly connected to the network pass the signal on to each other.
