Is the Epson EB-FH06 projector suitable for a projection distance of approx. 6m with a 30 degree inclination of the projection surface, image size approx. 2.5 - 3m wide? or should I use the Epson CO-FH02 projector?

Both projectors are capable of achieving an image width of 2.5 to 3 metres at a projection distance of 6 metres, and keystone correction helps to adjust the image shape when the projector is projected at an angle.
