Is this the explosive power supply that is definitely not recommended to use with a new GPU?

Yes, it is. P750GM and P850GM can "explode", but only in case of overload (only the two "primary switching FET" can).
Up to 850W you won't have any problems, it's more than enough for a good graphics card and for a normal PC. For OC buy another one.

Well, apparently there are always people who manage to plug in cables the wrong way round using brute force. Afterwards, a few brain cells might explode.

If you are referring to the problem with the modular cables: Always use the cables supplied !
The plugs are standardised, but not the pin assignment. Here, every manufacturer is allowed to cook his own soup.
Even within the same brand, there are usually differences in the pin assignment. Therefore, always consult the manufacturer; or if you have enough experience, measure with a multimeter whether the correct voltages are applied to the correct pins. Otherwise there is a risk of total damage.
The current situation with the modular cables is really very unsatisfactory. Often it will even work if you mix cables from different manufacturers, because there are not so many different possibilities for the pin assignment; if you only look at the peripheral connections; since about half of the pins only carry the ground. But that's just it: There is no guarantee. At any rate, I am not aware that standardisation is being sought here.

A free tip from me: Label the modular cables or at least supply the surplus cables in such a way that they can be assigned to the correct power supply unit at any time.
