Can I use the device to connect an old analogue 5.1 sound system to my Philips TV? Can I get 5.1 surround sound via Toslink at all? The sound system has 3x 3.5 colour-coded jack plugs as input.

I don't think so. Only because this converter has no jack plugs.
To answer your question a little better, you would need more information. Is the sound coming from the TV? What audio outputs does your Philips TV have? Or do you have a TV box from Swisscom, for example, from which the sound should be sent to the system?
You should be able to find what you are looking for in the AV receiver category.

It is important to know what is input and what is output (output in your case seems to be jack 3.5mm, there are also adapters for Cinch, for example).

I use the Toslink output of the TV and connect to a receiver from where I connect to the system with Cinch. This way, I always have all sources (DVD/Bluray player, Zattoo TV app, console and PC) directly on the system.
Toslink can definitely handle 5.1/Surround and all these digital sound technologies. It depends on what is supported by the input devices (TV box, console/PC, player).
But I'm not an audio professional, I just saw that you've been waiting for an answer for a while. Hope that helps.
