no real CAT7 cable - Cat 6A plug, Cat 7 raw cable. As far as I know, the lower one applies - too bad, I'm going for a proper Cat7 cable

Exactly right. Any intermediate connector is important for longer distances. Within a rack, it will probably also work with a Cat6a plug up to 10 Gbps.
